Ingredients

  • 1 cup AllWhites 100% Liquid Egg Whites or 4 hardboiled eggs, chopped
  • 1.5 whole ripe avocados, mashed
  • 1 tbsp Dijon mustard
  • 2 tbsp Veganaise vegan mayo (or regular mayo)
  • 1 tbsp red wine vinegar
  • ¼ tsp smoked paprika
  • Salt and pepper, to taste

Instructions

  1. If using liquid egg whites, pour them into a microwave-safe bowl and microwave for 1 minute. Stir and repeat until eggs are cooked thru. Chop cooked egg whites into small cubes. Mix all ingredients together in a large bowl. Serve chilled on toasted whole grain or gluten-free bread!
