Last week I treated my parents to brunch at one of my favorite local spots in Buffalo, The Healthy Scratch! It was their first time there and they fell in love with all the fresh, healthy choices.
I got a ‘make your own’ acai bowl, my mom got a quinoa breakfast salad with pesto and a poached egg on top, and my dad got the best of the bunch, an avocado egg salad sandwich!
We all raved about how flavorful and tasty the sandwich was for being SO simple! Avocado replaced the mayo that is used in traditional egg salad and creates the most creamy, rich tasting sandwich filling. As soon as we left, I knew I wanted to try to make my own version at home!
Luckily, I had a carton of my favorite AllWhites 100% Liquid Egg Whites on hand and a few ripe avocados that needed using up. We all know how finicky avocados can be so it was now or never!

Ingredients
- 1 cup AllWhites 100% Liquid Egg Whites or 4 hardboiled eggs, chopped
- 1.5 whole ripe avocados, mashed
- 1 tbsp Dijon mustard
- 2 tbsp Veganaise vegan mayo (or regular mayo)
- 1 tbsp red wine vinegar
- ¼ tsp smoked paprika
- Salt and pepper, to taste
Instructions
- If using liquid egg whites, pour them into a microwave-safe bowl and microwave for 1 minute. Stir and repeat until eggs are cooked thru. Chop cooked egg whites into small cubes. Mix all ingredients together in a large bowl. Serve chilled on toasted whole grain or gluten-free bread!
