I can’t and the coming of another Recipe Redux post reminds me of just how fast time flies! It feels like just yesterday I was in Europe. Speaking of which, you probably thought I would use something that I ate during my Europe trip as inspiration for this month’s RR recipe…you’ll see why once you read this month’s theme.

A Vacation-Inspired Recipe
Start unpacking your favorite vacation memories. Think about a trip you took state-side or internationally and create a healthy recipe from an unforgettable meal you enjoyed. Or, create a recipe from a native ingredient you saw or tasted on your travels.
You see, although I had a ton of memorable foods on my Europe trip, some of the most UNIQUE, EXOTIC, INCREDIBLE foods I’ve ever had came during my study abroad trip in the Philippines during junior year of college.
From the amazingly flavorful braised meat dishes and street noodles to lots of stir-fried rice and paellas! I loved it all. But of course, being the seafood lover that I am, the fresh fish dishes stole my heart. Grilled, fried, marinated, even raw! I ate it all and it was all so good. Some of the best seafood I’ve ever had in my life actually. One dish in particular that we had from a little hole-in-the wall cafe one day for lunch really stuck with me though.
It was an creamy, rich, aromatic seafood curry and it could not have been any more delicious! Today, I am recreating that memorable dish for you…with a few minor changes! 🙂
Now, I know what you’re thinking. Curry is usually associated with Indian cuisine, right? Yes. But that doesn’t mean it hasn’t infiltrated other parts of the world. In fact, the Philippines are known as the melting pot of Asia specifically for that reason. Their cuisine draws inspiration and roots from a number of surrounding cultures and countries like Indian, Japan, Malaysia, China, and Spain!
At some point curry spices (probably through the spice trade!) made their way into the Filipino cuisine, and the rest is history! Of course, the Filipinos (being as creative as they are!) made it their own and adapted traditional Indian usage of curry to their own unique dishes.
Whereas Indian curry uses traditional curry powder (the bright yellow-orange spice you’re used to seeing in stores) that combines coriander, turmeric, cumin, fenugreek and chili peppers, Filipino curry incorporates curry pastes and fresh herbs to flavor their dishes. Curry powder is used sparingly and the curry flavor instead comes from things like red chile paste, ginger, garlic, and basil.
One thing that both curry varieties have in common, however? Their use of coconut! Cream, milk, powder, flakes, shreds. You name it…the rich, creamy, sweet coconut flavor is present in most chicken or seafood curries whether you’re
in India or the Philippines. Something my tastebuds are very happy about.
My recipe includes all I loved about that original seafood curry (the prominent coconut flavor, bold spices, salty seafood, and rich broth) with a few fun twists that make it super easy to recreate at home. In fact, it’s only got 7 ingredients! Curry doesn’t get simpler than that.

Ingredients
- 1 6oz can of clams, drained
- 1 6oz can of salad shrimp, drained
- 32 oz low sodium vegetable broth
- 1 package of frozen stir-fry veggies
- 2 tbsp coconut milk powder
- 1 tbsp thai red curry paste
- 1 tsp dried ginger powder
Instructions
- Simmer all ingredients in a soup pot for 25 minutes. Serve with minced cilantro, crushed roasted peanuts, and shredded coconut.
Gluten-free, oil-free, full of flavor, and packed with lean seafood protein, this soup makes the perfect one pot meal that seafood lovers and curry lovers alike will enjoy. Heck, even if you’re not a seafood lover, I think you’ll like this! It’s just so flavorful and fragrant for having so few ingredients.
When I made this (several times) I paired it with a homemade lime and thai basil mojito! The zesty lime flavor and fragrant basil was the perfect compliment to the rich coconut flavor and exotic spices.
