7-Ingredient (Or Less) Recipes
It’s Income Tax Season, so our brains could use some easy arithmetic; as in seven-ingredient-or-less recipes. Show us the healthy, no-brainer dish you fix for breakfast, lunch or dinner. Think beyond smoothies or drinks, please. (And for those of you living in countries where it’s not Tax Season – we’re pretty sure you and your readers would still love doing the math for seven-ingredient-recipes!)
Well, I have a fun story to share that goes perfectly along with this theme! Let’s get right into it…
My mom has this habit of buying huge portions of things that we already have in the house.
Take sweet potatoes for example, we’ll have a whole bag at home already, yet she’ll go to the store and come home with 4 more for the week. She claims she forgot we had them, but I think she just forgets to check the pantry before heading to the store. 😉
I don’t hold it against her though! She’s got a lot on her mind lately. And seriously…can you really have too many sweet potatoes in the house?
I didn’t think so…that is until I realized we had about 10 lying around the other week. Even for a sweet potato lover like me, I knew we’d never be able to use them up before they started to go bad. So I did what I always do as the resident ‘food user-upper’, I decided to come up with a new recipe to lower our sweet potato stockpile.
My first attempt was 1 ingredient caramel sauce. I found a recipe online, baked the potatoes, drained the cooking liquid from the baking pan, put it on the stove to thicken, and ended up with a burnt pot. Womp womp. I don’t really know where I went wrong, but I certainly did not make caramel. The house smelled good at least!
Then I was left with a new problem…tons of perfectly cooked, creamy sweet potato flesh. There’s just something so special about actually baking potatoes in the oven that makes them taste especially delicious! They reminded me of caramel actually.
With that flavor still fresh in my mind, I decided to just do some random mixing and blending. I put them in the food processor, added dates, and pushed start! I sort of had a sweet potato mouse in mind, but once I added some cocoa powder and realized that I had created a sort of truffle-like texture, I knew it was time to make some balls!
The taste of this mixture was incredible. Sweet yet rich in dark chocolate bitterness and caramel undertones. I formed the mix into a bunch of bite-sized morsels (a messy process since the batter is sort of sticky!) and popped them in the freezer to set! The result was not what I expected, but totally amazing.
3 Ingredient HCLF Vegan Fudgsicle Bites
- Prep Time: 10 mins
- Cook Time: 1 hour
- Total Time: 1 hour 10 mins
- Yield: about 24 bites 1x
- Category: dessert
- ¼ cup cocoa powder
- 1 cup dates, chopped and soaked in hot water for 10 minutes
- 2 sweet potatoes, peeled and baked
- Drain water from the dates. Place cocoa, sweet potato, and dates in a food processor. Blend on high until smooth. Place mixture in the freezer for about 5-10 minutes to thick up a bit. Form batter into 24 balls (careful it’s sticky!). Freeze bites for at least 1 hour. If desired, remove from freezer, place bites and a little cocoa powder in a plastic bag, shake the bag to coat them with a cocoa powder dusting. Store in the freezer.
Since it’s officially spring (AS OF TODAY!!!), I think it’s totally appropriate that I am sharing a cold, creamy treat! All the more reason to start looking forward to summer weather, am I right?! When I first put these bites in the freezer I thought they’d retain their truffle-like texture, but instead they turned into the exact replicate of FUDGSICLES! I couldn’t believe how spot on the taste was. Literally like biting into those Popsicle brand treats from childhood. Talk about a nostalgic recipe!
Luckily, these bites are whole lot healthier. Let’s compare:
