These 2 Ingredient Banana Bread Bites are incredibly easy to make for healthy, sweet snacks on the go! Vegan, gluten-free, & grain-free, these bites taste just like a fresh loaf of banana bread without any baking required.
Sometimes I chuckle a bit to myself when I look online and seeing popular bloggers with hundreds of thousands of followers sharing over simplistic recipes for foods or dishes that really are “common sense” to the majority of the population. (Reminds me of this from Paula Deen!! ? The comments are the best!)
In regards to these “common sense” recipes, we’re talking things like a ‘recipe’ for PB&J. A ‘recipe’ for yogurt with granola on top. A ‘recipe’ for scrambled eggs.
Granted, not everyone is a whiz in the kitchen, but there are certain foods that pretty much everyone knows to make in some capacity or another.
While I do have a slight problem “common sense” recipes, I don’t have a problem with recipes that are super EASY to make. Sometimes the easiest recipes require the most creativity. Usually, they bring together a few (or in this case only 2!) ingredients that wouldn’t normally go together or you wouldn’t think could be combined to make something. I have tried a lot of 2 ingredient recipes over the years, some gems and some fails, but I’ve always been pleasantly surprised at the how a recipe made from only 2 foods can turn into something amazing!
Here are a few of my favorite 2 ingredient recipes I’ve tried over the years…
Banana + egg (mixed and fried) = paleo pancakes
Greek yogurt + rolled oats (mixed) = overnight oatmeal
Dates + chopped nuts (mixed) = raw energy bites
Banana + oats (mixed and baked) = banana cookies
Pumpkin + oats (mixed and baked) = pumpkin cookies
Self-rising flour + Greek yogurt = pizza dough
Peanut butter + frozen banana (blended) = peanut butter banana ice cream
Oreos + melted white chocolate (mixed and refrigerated) = white chocolate Oreo bark
Pumpkin + boxed spice cake mix (mixed and baked) = pumpkin spice muffins
Coconut butter + melted chocolate chips (mixed) = magic chocolate shell for frozen desserts
Chicken breast + 1 jar of salsa (mixed and put in the crock pot) = shredded salsa chicken
Chicken breast + Italian dressing (mixed and put in the crock pot) = Italian chicken
And today, I have a NEW favorite to add to the list! A bite-sized snack with all the flavor of a freshly baked loaf of banana bread without needing to turn on the oven, crack an egg, or even BUY BANANAS!
My 2 Ingredient Banana Bread Bites are vegan, gluten-free, grain-free, and even PALEO friendly. They’re made with one of my favorite baking mixes from Simple Mills (I also love their crackers…but beware, they are HIGHLY addicting).
I love Simple Mills products because of their super simple, whole foods ingredients. This is what’s in the Banana Bread Mix for example…
Almonds
Banana
Organic Coconut Sugar
Arrowroot
Organic Coconut Flour
Baking Soda
Sea Salt
So simple…yet so delicious!

Combine that wonderful baking mix with some vanilla almond butter and you’ve got delicious Banana Bread Bites in only a few minutes.

- Prep Time: 5 mins
- Total Time: 5 mins
- Yield: 10 balls 1x

Ingredients
- 1 cup Simple Mills Banana Bread Mix
- ¾ cup vanilla almond butter
- Optional mix-ins: chopped walnuts or almonds, mini chocolate chips, finely shredded coconut, chopped dried banana pieces
Instructions
- Mix both ingredients in a bowl until a soft, sticky dough forms. Roll dough mixture into 10 even balls and refrigerate for at least an hour to firm them up. Store in the refrigerator.
2 ingredients. One mixing bowl. Less than an hour in the fridge. Banana bread perfection in bite-sized form!
So yeah, this recipe may be incredibly simple…but the results taste nothing short of AMAZING. And since there is not baking required, you have no excuse not to make these in the peak of summer heat.
