Even though National Soup Month is has (sadly) ended, that doesn’t mean the soup train can’t keep rolling on! Especially since it’s still winter, still freezing, and soup sounds good to me almost ANY time of year.
I love soup. There is something so comforting and warming about a big bowl of soup with lots of nourishing ingredients or even a pureed soup that is smooth, creamy, and rich. Pair it with a side of crusty bread or crackers and you’ve got the ultimate meal for a wintry day.
Today I’ve rounded up 10 of the best soups, stews, and chilis from the blog….as well as one NEW recipe I’m sharing for the first time today.

But first, I wanted to share my GO-TO recipe for the Easy Instant Pot Italian Vegetable Soup I make almost EVERY WEEK.
Easy Instant Pot Low-Cal Italian Vegetable Soup
- Prep Time: 5 minutes
- Cook Time: 25 minutes
- Total Time: 30 minutes
- Yield: 5 servings 1x

Ingredients
1 bag of frozen mirepoix
1 bag of frozen mixed vegetables (broccoli, cauliflower, carrots)
1 bag frozen peppers and onions
1 28 ounce can of no salt tomato sauce (or crushed tomatoes or 2 14 ounce cans of no salt diced tomatoes)
1 32 ounce container of low sodium veggie broth
1 tbsp italian seasoning
salt and pepper, to taste
Optional: add a can of beans, cooked grains, lentils, canned chicken or canned salmon
Instructions
Place all ingredients in the Instant Pot. Set to manual for 25 minutes and move the valve to release the pressure once the clock reaches 0.
